Honey Mustard Chicken

I love a fast east dinner! I used to eat these Rold Gold pretzels that were honey mustard flavor..basically, I am a sucker for anything honey mustard! 

This recipe I baked in the oven it was so easy to mix, make and go! Next time I will for sure throw them on the grill because this was good but I bet it would be a million times better grilled. Now that the weather is nicer I am definitely having it!

CONTAINERS- 1 orange 1 red

INGREDIENTS 

  • 4 Boneless skinless chicken breasts
  • 1/2 cup honey or 1/4 cup honey and 1 packet of stevia 
  • 1/4 cup of yellow mustard
  • 1/4 Dijon mustard 
  • 1 tsp Italian seasoning
  • 1/2 teaspoon garlic powder
  • 1 teaspoon smoked paprika ( regular works great too)
  • salt and pepper to taste I use about 1/4 tsp salt
  • Olive oil spray

DIRECTIONS

  1.  If using the oven Preheat to 350, spray a baking dish with olive oil spray, set aside
  2. In a bowl combine honey, mustard, Italian seasoning, salt, pepper, garlic, and paprika 
  3. Toss chicken and sauce together then place all the sauce and chicken in the prepared dish.
  4. Bake for 30 min turn chicken and bake for 10 more min

( if using thinner chicken please reduce cooking time to about 25 min) 

For grilling, I usually cut the larger chicken lengthwise in half and cook about 10-12 min until done allowing them to rest on the counter for a few min before cutting into them otherwise you will lose all of your juices. 

PB & Jelly Oatmeal

I love Peanut butter and jelly just like the next person but its what my kids eat these days not mama! I kicked it up to the adult knotch with these PB and J oats for a super fast simple breakfast or great snack! 

I hope you enjoy these as much as I do! 

To make this an easy breakfast idea you can take 1/4 cup quick oats and place them into a snack size baggie with a pinch of salt and cinnamon and they will be ready to dump in a bowl and add PB Berries and liquid for a simple breakfast. To Make it even faster choose blueberries, rasberries or blackberries for no chopping.

Portion Fix Containers - 1 yellow, 1 purple 2tsp

INGREDIENTS

  • 1/4 cup of quick oats dry
  • a pinch of salt ( do not skip this step)
  • 1 or 2 teaspoons of honey or 100% pure maple syrup
  • 2 teaspoons of crunch almond butter ( you can use PB or smooth but crunch almond butter is the best combo I have tried)
  • 3/4 cup fresh berries of choice 
  • Hot water I like my oatmeal a bit thicker so add for you desired consistency 

DIRECTIONS 

  1. Put dry oats, salt, cinnamon, almond butter and sweetner of choice in a bowl add hot water for your desired consistancey.
  2. allow the oatmeal to sit for 1 or 2 min, stir well and top with berries
  3. ENJOY 

PB & Jelly Green Smoothie

I did this 5-day Detox after eating my body weight in candy at Easter... JK it wasn't that bad but I was nott feeling good. Bloated, sluggish, craving sugar and I knew I needed to rid my body of all that sugar. This smoothie was part of it and It has stuck around I absolutely LOVED IT! 

 

PRO TIP- You know when you buy grapes and you didn't get though all of them before they start to turn? Throw those bad boys in the freezer and use them for this smoothie. Bonus if you take them off the vine to make it even easier to grab for this quick delishous smoothie! 

INGREDIENTS 

  • 2 cups of organic baby spinach 
  • 1/4 avocado ( don't skip this, I know it seems weird but it makes it creamy!)
  • 1/4 cup red grapes ( these can be fresh or frozen)
  • 1/2 cup organic frozen strawberries 
  • 1 tablespoon Almond butter ( I used cashew once and it was not the same, I recommend almond butter for best results crunchy is my fav!)
  • 1 tsp ground flax ( can omit if you do not have it)
  • 1 cup of water 

DIRECTIONS 

  1. Place all of the ingredients into a high powered blender and blend till smooth, add more water for thinner or less for a thicker smoothie. Ice is optional I think the flavor is better without if you have frozen fruit. 
  2. ENJOY!

Crunchy Detox Salad

OMG where has this salad been all of my life!?!?!?!? I participated in this 5 day detox group and I have to say when I saw this salad I turned my nose up. I dislike cauliflower...but for real, I hate it and the smell! Don't even get me started. Cabbage also not a favorite of mine. 

But..... I tried it anyway for the sake of debloating after that Easter candy situation haha! 

Guess what!? I freaking loved this salad so much that I have eaten it 3 days in a row! I do not like to eat the same stuff, this sister needs variety. 

This one is a keeper, you could totally chop all this up and keep it in the fridge and eat off of it for a week without it going bad SCORE! Healthy meal prep made easy! 

Serves 4 Containers 1 Green 1 orange 

INGREDIENTS 

  • 2 cups chopped cauliflower 
  • 2 cups chopped broccoli
  • 1 cup red cabbage chopped
  • 1 cup carrots chopped
  • handful chopped fresh cilantro
  •  1/2 cup roasted salted almonds chopped
  • 1/2 cup roasted salted sunflower seeds 

DRESSING

  • 2 tablespoons of honey
  • 1/2 cup fresh lemon juice
  • 1/4 tsp garlic powder (optional)
  • Salt and pepper to taste
  • 4-5 tablespoons of olive oil 

DIRECTIONS 

  1. Place all chopped ingredients into a bowl and set aside
  2. In a bowl add honey, salt, pepper and lemon juice whisk well
  3. While whisking slowly drizzle olive oil into mixture until fully combined. Taste dressing and adjust seasoning if needed. 
  4. place 1/4 salad mixture in a bowl top with nuts and seeds, toss with dressing serve immediately
  • * I keep this salad in the fridge for a week and whisk up the dressing when I want to have it, takes only a few seconds. Dressing can be made ahead of time but I leave it out of the fridge otherwise it hardens due to the olive oil. I also keep the almonds seperate and add on when I am ready to eat it!
