This recipe will blow your mind with how yummy and amazingly easy it is! Definitely a keeper and one that our family will be putting on repeat! What I love also is that this is a lower carb option. I LOVE my carbs and I tend to have them every evening for dinner so it is nice to go a bit lighter with dinner every once in a while. This one hits the spot while making me feel totally satisfied.

INGREDIENTS
- 1 rotisserie chicken ( skin discarded and meat shredded while warm)
- 1 spaghetti squash cooked and shredded (if it is very watery squeeze in a paper towel to remove the water) * you may also use 2-3 grated zucchini in the spring time *
- 2 eggs
- 1/4 cup Parmesan cheese
- 1/4 tsp salt
- 1/4 tsp Garlic powder
- 1/4 tsp onion powder
- 1- 2 Tbs olive oil
TOPPING
- 1/4 cup plain Greek yogurt
- pinch of salt
- 1/8 onion powder
- 1/8 garlic powder
- chopped green onions or chives
DIRECTIONS
- Place shredded chicken and all other ingredients into a mixing bowl ( keeping topping ingredients separate for now) mix well and form into patties. These can be made right away or placed into the fridge until ready to make)
- Pre-heat skillet on medium heat with 1-2 Tbs olive oil, saute each fritter until golden brown on each side and warm though the middle. About 5-6 minutes total
- while fritters are cooking, mix all of the toppings together and dollop onto fritters ENJOY!
