I really enjoy Mexican flavors and a very easy dinner for us is tacos. I love to also have them as a quick easy lunch option. This particular day, I packed Colin lunch and he requested "sour cream" which is Plain Greek Yogurt in out house with blue corn tortilla chips. I made my lunch and there was not more plain Greek yogurt, I was crushed until I remembered there was a new Chipolte Ranch dressing I had been wanting to try....well I guess now is my moment and it was amazing!
HOW TO PREP TACO SALAD FOR THE WEEK!
This is how I meal prep these for a week of taco salads. Have shredded cheese on hand with your favorite Pico De Gallo and dressing.
Hands on Time: 25 min Containers: 1.5 Green .5 blue .5 Purple 1 Yellow 1 orange
INGREDIENTS
1 bag of romaine lettuce chopped ( or get pre-chopped organic preferred)
1 can black beans rinsed and drained well
3 multi colored bell peppers chopped
2 cups of corn thawed from frozen or 1 can corn drained and rinsed. ( preferred fresh when available)
1 container or your favorite Pico De Gallo salsa or jarred salsa (avoid added sugar)
1 bag shredded cheese
2 lbs of lean ground beef, turkey or chicken.
Taco seasoning ( you'll need 2 tablespoons of tomato paste as well) I make this taco seasoning to have on hand at all times so when the urge hits I have this clean eating mix without all the nasty preservatives and high amount of sodium.
DIRECTIONS
- Make 2 lbs of taco meat (turkey, chicken or beef) recipe here .
- Chop Organic Romaine lettuce and store in air tight container. I like to use a plastic knife as to avoid any browning or chop before use)
- Mix 1 can black beans, 2 cups of frozen corn thawed, 3 bell peppers multi colored, chopped place all of it in a container and keep on hand.
- Have shredded cheese on hand with your favorite Pico De Gallo and dressing.
You can now throw all the ingredients into a container and you have a packed lunch in under 5 minutes. The dressing I used was from ALDI it is from Simply Nature -Organic Chipolte Ranch Dressing. Alternatively, You can mx together your favorite jarred salsa and plain Greek yogurt for a great dressing.
