This was a super fresh satisfying dish that I made for my sister, she said 4 times while she was having it how much she loved it. Sometimes you just crave a really good salad! This is one of those that just get better with time while marinating in the fridge. Don't be afraid to double this one because at 4 serving we were all sad when it was gone.
TIME: 25 min Containers use 1 green container per serving = .5 YELLOW, 1 GREEN 1 ORANGE 1 BLUE
INGREDIENTS
- 1 cup of cooked large couscous
- 1 large tomato diced
- 1-2 tablespoons of finely minced red onion
- 1 red bell pepper diced
- 1 orange bell pepper diced
- grape tomatoes seeded cut in half
- 1/2 cucumber diced
- 1 cup of arugula/spinach mix ( or any leafy greens)
- Chopped cilantro
I used Lime Dressing for this recipe as follows:
- 1 Tablespoon of Honey
- Juice of 2 limes
- juice of 1 lemon
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- heavy pinch of salt
- 1 squirt of siracha
- optional Mrs. Dash southwestern seasoning to taste
- 1/4 cup olive oil
Wisk all Ingredients except for the olive oil, slowly whisk in olive oil taste and adjust seasoning to your liking.
Directions
- Cook couscous according to package ( use salted water to boil)
- While the couscous is cooking chop all veggies and make dressing
- Rinse the couscous under cold water after it is cooked
- Combine couscous and fresh veggies in a bowl and top with the dressing, stir to coat. Taste and adjust seasonings. ENJOY!
