Banana Oat Pancakes

So excited to share these with you guys! This is a sneak peak from the 21 day fix cookbook from Autumn called FIXATE, which you can get here.  Your family will love these, mine do. They are a incredibly easy to make just using a blender! I make a double batch and freeze them, that way on the weekend you can just pop them in the microwave when you wake up on Saturday morning easy peazy.

Ingredients

  • 1 Cup Unsweetened Almond Milk
  • 2 large Eggs 
  • 1 large ripe banana
  • 1 tsp vanilla extract
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1 dash of sea salt
  • 2 cups Old-Fashioned oats gluten free
  • 1/2 tsp coconut oil or coconut oils spray
  • 2 cups fresh mixed berries 

Directions 

Place oats into blender and blend until they look like an oat flour. Place almond milk, eggs, banana, extract, baking powder, cinnamon, salt in the blender and blend till smooth. Pour batter onto preheated griddle or skillet sprayed with coconut oil. FLIP.SERVE.ENJOY. top with mixed berries.
